Protección contra incendios en cocinas

Tecnifuego-Asepi ha presentado un documento técnico sobre requisitos mínimos de un sistema de extinción para la protección de incendios en cocinas.

Ante la falta de recomendaciones técnicas en la materia y dada la obligatoriedad de protección de las cocinas en determinadas condiciones, el Comité Sectorial de Sistemas Fijos de Tecnifuego-Aespi, según señala el CTE, ha decidido elaborar un documento que recoja los “Requisitos mínimos que debe tener un sistema de extinción para la protección en cocinas”.

Este documento técnico, que recoge el consenso del comité, se presenta como una herramienta de gran utilidad para la instalación, inspección, mantenimiento y supervisión del sistema de extinción de una cocina  profesional y/o industrial. 

Redactado de manera sencilla y práctica, este manual puede ser consultado tanto por bomberos, técnicos de organismo de control, instaladores, mantenedores y los propios usuarios. Recoge aspectos relacionados con el diseño, la instalación, el funcionamiento, la prueba y el mantenimiento de los sistemas fijos de extinción de incendios para protección de cocinas, campanas de extracción, plenums, conductos y otros elementos que pueden estar presentes en las cocinas.

El documento está dividido en apartados, para facilitar la consulta, como: componentes (difusores de descarga, tuberías, agente extintor), requisitos del sistema (actuación, ubicación, requisitos especiales…)  prueba, y mantenimiento de las instalaciones.

Por ejemplo, una de las recomendaciones, relacionadas con la actuación del sistema, indica que se deberían proteger todos los elementos de la cocina de forma simultánea (zonas de cocción, campana, plenum y conductos) para evitar la propagación del incendio que se puede producir si se protege sólo cada uno de dichos elementos.

El documento técnico “Requisitos mínimos que debe tener un sistema de extinción para la protección en cocinas” está disponible en formato digital para todos los profesionales que lo necesiten y también puede ser consultado y descargado en la web de Tecnifuego-Aespi.
