En el marco del salón Alimentaria 2012, Luis Eduardo Montes, co-autor del libro Diseño Higiénico de Cocinas Profesionales, explicó ayer cómo diseñar una cocina con un óptimo nivel de higiene y seguridad alimentaria.

El Instituto Silestone participó ayer en Alimentaria 2012, el Salón Internacional de la Alimentación y Bebidas, que se celebra esta semana en Barcelona, con una conferencia sobre Diseño Higiénico de Cocinas Profesionales, pronunciada por Luis Eduardo Montes.

Para Montes, los elementos básicos a tener en cuenta para el diseño higiénico de cocinas son la arquitectura, la ingeniería de las instalaciones, la instalación de maquinaria y la ingeniería de procesos.

Entre los aspectos calve destacan la separación de espacios sucios y limpios o la elección de los materiales utilizados.

En el marco de su labor divulgativa, el Instituto Silestone impulsa el conocimiento y difunde la información científica necesaria para dar a conocer los últimos avances en tecnología y productos, así como las mejores prácticas de higiene encaminadas a mejorar la salud y la calidad de vida de las personas.

En esta área de actuación el papel de consumidores y profesionales es fundamental, quienes van a beneficiarse de todos los avances en una sociedad que cada vez demanda productos más seguros y cuyas características antibacterias suponen un gran valor añadido.
